On a French price list, "raie" covers several species of the ray family, caught mainly in the English Channel and Brittany and sold whole or as wings, with or without skin; at French fish auctions, five species make up most of the sales: thornback ray (raie bouclée), cuckoo ray (raie fleurie), blonde ray (raie lisse, also called "blonde"), undulate ray (raie brunette) and spotted ray (raie douce). In France, the trade name "raie" is permitted alongside the species name ("raie bouclée", "raie fleurie"...): only the scientific name, mandatory on the label, says which ray it is.
Buying sheet
| Skate and ray | |
|---|---|
| Scientific names | Thornback ray Raja clavata; cuckoo ray Leucoraja naevus; blonde ray (raie lisse or blonde) Raja brachyura; undulate ray Raja undulata; spotted ray Raja montagui |
| Peak season | All year round, with no marked peak across all species. In 2024: thornback ray most plentiful in July, cuckoo ray in April and May, blonde ray in April, undulate ray from July to October |
| Closed season | No closure specific to rays. "Skates and rays" quotas shared by several species, set by area, and species-by-species reporting. Undulate ray: separate quota in the English Channel (ICES divisions 7d and 7e); targeted fishing banned in the Bay of Biscay, where only a regulated "sentinel" fishery is allowed in 2026 |
| Minimum size | No EU minimum size for rays (EU regulation 2019/1241) |
| Banned species | Common skate complex, white skate and a few others: see the box below |
| Size grades on price lists (examples of trade practice, not a standard) | Skinned or skin-on wings: 300 to 500 g, 500 g to 1 kg, 1 kg and over. Whole thornback ray: 3 to 6 kg, 6 to 10 kg |
| Main French fish auctions (2024) | 5,847 t for the five species. Thornback ray: Port-en-Bessin 31%, Boulogne-sur-Mer 20%, Fécamp 11%. Cuckoo ray: Le Guilvinec 56%. Blonde ray: Saint-Quay-Portrieux 18%, Roscoff 14%, Brest 13% |
| Origins | North-East Atlantic (FAO area 27): English Channel, Celtic Sea, Bay of Biscay; spotted ray also in the Mediterranean (FAO area 37) |
| Fishing methods | Mainly trawl: in 2025, trawlers supplied about three quarters of the thornback ray and nine tenths of the cuckoo ray sold at auction; then demersal seine (thornback ray) and net |
| Yield | Depends on the presentation: whole ray, skin-on wing, skinned wing. No reliable public figure: to be measured on your own deliveries |
| Storage | On melting ice (0 to 2 °C), wings laid flat, and to be prepared quickly |

Which rays are found on a price list?
- Thornback ray is the leading ray at French fish auctions: 2,152 t in 2024, sold mainly in Normandy and Hauts-de-France (Port-en-Bessin, Boulogne-sur-Mer, Fécamp, Cherbourg).
- Cuckoo ray is the ray of south Brittany: more than half of its sales go through Le Guilvinec.
- Blonde ray (raie lisse), which the fish auctions also call "blonde", is the most expensive of the five on average; it sells mainly in north and west Brittany (Saint-Quay-Portrieux, Roscoff, Brest, Audierne).
- Undulate ray has its own rules: separate quota in the English Channel, and landing allowed only for whole or gutted rays.
- Spotted ray is the rarest of the five at auction (297 t in 2024).
Once the wings are cut, and even more once skinned, the species can no longer be recognised by eye. A "skate wing" (aile de raie) line with no further detail gives neither the species nor the area: the label, with the scientific name, the catch area and the gear, is what counts.
Skinned or skin-on wings: what to order?
- The skin-on wing keeps its skin: it is skinned in the kitchen, and part of the weight bought goes to waste.
- The skinned wing is ready to cook: more expensive per kilo, it saves labour and trimming loss. Compare the two on the price of the portion served, not the price per kilo.
- The wing size decides the portion: a 300 to 500 g wing makes one plate, a wing of more than 1 kg is sliced.
- The whole ray is only worthwhile for a kitchen that does its own cutting: the central body, little used, is included in the price per kilo.
Yield varies with species, size and presentation: measure it on a few deliveries, skinned and skin-on, before setting the cost of the portion (see the food cost guide).
How to judge the freshness of a ray?
Skin covered with clear, abundant slime; pearly, firm, shiny flesh, with no pinkish or dull areas; supple wing that springs back into shape. A smell of ammonia signals a tired ray: refuse it. These are trade clues; the catch or delivery date and the cold chain count as much as appearance.
What to replace a ray with when it is short?
What makes the price of ray move?
| Average first-sale price at auction, France, 2024 | Yearly average price | Cheapest month | Most expensive month | Spread between auctions |
|---|---|---|---|---|
| Thornback ray (2,152 t) | about €2.27/kg | July: about €1.76/kg | February: about €3.09/kg | from €2.05/kg (Fécamp) to €2.40/kg (Cherbourg) |
| Cuckoo ray (1,448 t) | about €2.10/kg | August: about €1.75/kg | February: about €2.51/kg | from €2.05/kg (Le Guilvinec) to €2.34/kg (Loctudy) |
| Blonde ray (1,271 t) | about €2.64/kg | July: about €2.18/kg | March: about €3.00/kg | from €2.39/kg (Brest) to €3.08/kg (Saint-Guénolé) |
| Undulate ray (679 t) | about €2.36/kg | July: about €1.87/kg | April: about €2.93/kg | from €2.17/kg (Port-en-Bessin) to €2.64/kg (Granville) |
| Spotted ray (297 t) | about €2.52/kg | July: about €2.06/kg | February: about €3.23/kg | from €2.25/kg (Roscoff) to €3.15/kg (Le Grau-du-Roi) |
Year 2024, all French fish auctions: average first-sale price at the auction hall, national, by species (FranceAgriMer, sales declared at fish auctions, workbook published on 2 July 2026). Spread between auctions: the cheapest and the most expensive of the auction halls handling at least 5% of the species' volumes. Prices given to the cent, given their level. The auction price applies to ray as landed, all presentations combined, and it is not the price paid to the fish merchant: wing cutting, skinning, processing, transport and margin are added to it.
Summer is the season of cheap ray, late winter that of expensive ray. For thornback ray, July 2024 was both the busiest month (238 t) and the cheapest (about €1.76/kg), while February, with 141 t, sold at around €3.09/kg. Across all species, French fish auctions sold 577 t of rays in July 2024 at about €1.90/kg, against 471 t in February at about €2.88/kg (editorial team's calculation). 2025 confirms the July low for thornback, blonde, undulate and spotted ray. Spreads between auctions stay small for the main species, a few tens of cents; they may come from size, quality or local outlets, and the workbook does not allow a conclusion.
- The season and landings: in summer, when landings are high, ray is cheapest; late winter is the most expensive. Tonnages do not explain everything: in November 2024, the weakest month (about 360 t across all species), it sold at around €2.50/kg, cheaper than in February.
- The species: blonde ray and spotted ray sell slightly higher than thornback and cuckoo ray.
- The presentation: the wing, and even more the skinned wing, costs much more per kilo than the whole ray, since only part of it is kept.
- The wing size: large, thick wings sell above small ones.
- Quotas: shared between species and set each year by area, they cap landings.

Frequently asked questions
Which ray sells most in France?
At auction, thornback ray (Raja clavata): 2,152 tonnes in 2024, more than a third of the sales of the five main ray species. It sells mainly at Port-en-Bessin, Boulogne-sur-Mer, Fécamp and Cherbourg.
What is the auction price of ray?
In 2024, between €2.10 and €2.64/kg on average depending on the species (FranceAgriMer), about €2.33/kg for the five species together. This is the first-sale price of ray as landed: the wing, all the more so when skinned, costs much more from the fish merchant.
When is ray cheapest?
In summer. In 2024, thornback, blonde, undulate and spotted ray had their lowest average price in July, cuckoo ray in August. The highest prices fall between February and April.
Which rays are banned from sale?
Union vessels may not fish, keep on board or land the common skate (Dipturus batis) in the North-East Atlantic, nor the white skate (Rostroraja alba) in Union waters from west of Scotland to the Azores, including the English Channel and the Bay of Biscay; the sale and display of white skate are also banned. Other bans apply to certain areas only, such as undulate ray west of Scotland.
What does "aile de raie pelée" mean?
A skinned skate wing: the skin has been removed, and it is ready to cook. It costs more per kilo than a skin-on wing, but there is no more trimming loss: compare the two on the price of the portion.
