In Lyon, there is no fresh seafood trading floor: the Lyon-Corbas wholesale market, opened in 2009 to replace the former marché-gare, is a private market devoted to other fresh products, and its directory lists no fresh seafood wholesaler. Restaurants and fishmongers in Lyon therefore source from seafood wholesalers who deliver, from port-based fish merchants (mareyeurs) who ship direct, and from Rungis wholesalers.
This is a clear difference from Paris or Marseille. In Lyon, you do not go "to the market" to choose your fish: you order it. The choice of supplier, of their port and of their order cut-off time matters all the more.
Why is there no wholesale fresh seafood market in Lyon?
The former Lyon marché-gare, opened in 1961, gave way in January 2009 to the Lyon-Corbas wholesale market, built within the conurbation's new agri-food hub. It is a private wholesale market, devoted to other fresh products. Its directory lists no wholesaler of fish, shellfish or crustaceans: the conurbation's seafood wholesalers work outside its premises and deliver to their customers.
The market remains useful to restaurateurs for the rest of their purchases, not for fresh seafood.
| Place | What you find there | Days and hours | Access |
|---|---|---|---|
| Lyon-Corbas wholesale market | Other fresh products, no fresh seafood | Monday to Friday, sales from 5 am to 12 noon | Professionals, registration with the market |
| Seafood wholesalers of the conurbation | Fish, shellfish and crustaceans | To order; generally delivered the next day, depending on the wholesaler and the carrier | Customer account with each wholesaler |
| Rungis, seafood hall (about 450 km away by road) | Wholesalers and commission agents (mandataires), all origins | Tuesday to Saturday, 2 am to 7 am | Buyer's card; full-service wholesalers ship |
Three ways to source fresh seafood in Lyon
- A Lyon wholesaler who delivers. This is the simplest route for a restaurant. They buy from several fish merchants and from imports, prepare and deliver, generally the day after the order, depending on the wholesaler and the carrier. You gain regularity and a single contact; they choose the range.
- A port fish merchant, direct. They buy at the fish auction (criée), prepare and ship by refrigerated carrier. Lyon is about 300 km by road from the Languedoc fish auctions, which makes direct supply from the Mediterranean realistic; from the Atlantic and Brittany, further away, the lead time depends on the fish merchant and the carrier.
- A full-service Rungis wholesaler. Some ship to the regions: useful for species or origins not found locally, at the cost of extra transport.
Where does the fish delivered to Lyon come from?
| Port of origin | Distance from Lyon by road | Leading species of the fish auction (2024) |
|---|---|---|
| Le Grau-du-Roi | about 290 km | Octopus, gilthead sea bream, hake, monkfish, Dover sole, Atlantic bluefin tuna |
| Sète | about 330 km | Monkfish, octopus, gilthead sea bream, hake, deep-water rose shrimp |
| Agde | about 360 km | Octopus, monkfish, Atlantic bluefin tuna, gilthead sea bream |
| Port-la-Nouvelle | about 410 km | Octopus, gilthead sea bream, anchovy, hake, red mullet |
| Rungis (relay for all origins) | about 450 km | Salmon, sea bream, sea bass, king scallop |
| Les Sables-d'Olonne | about 650 km | Dover sole, sea bass, hake, cuttlefish |
| Boulogne-sur-Mer | about 720 km | Mackerel, king scallop, cuttlefish, saithe |
| Saint-Jean-de-Luz | about 780 km | Hake, albacore, ling, Atlantic bluefin tuna |
| Lorient | about 850 km | Langoustine, monkfish, hake, Dover sole |
| Le Guilvinec | about 950 km | Monkfish, langoustine, albacore, megrim, skate |
Species: FranceAgriMer, sales declared at fish auctions in 2024 (Rungis: Semmaris 2023 annual report). Distances: editorial team's calculation, rounded. Delivery: generally the next day, depending on the fish merchant and the carrier.
Two readings of this table. The Mediterranean is the nearest coast, but its fish auctions are small: from 1,200 to 2,300 tonnes sold in 2024 for each, when Boulogne-sur-Mer sells 18,000. The Atlantic and the Channel bring volume and diversity, from further away.
Which days to order, and until what time?
- From Tuesday to Saturday, the Rungis seafood hall is open; what is sold at auction one day is generally delivered the next day, depending on the fish merchant and the carrier.
- On Monday, the Rungis seafood hall is closed: ask your wholesaler whether they deliver that day.
- The order cut-off time varies from one supplier to another. For a direct shipment from a port, it depends on the time of the auction sale: ask the fish merchant.
What is local or in season in Lyon?
Lyon has no port, but the Mediterranean is about 300 km away by road. Its fish auctions mainly sell octopus, gilthead sea bream, monkfish, hake, red mullet and, under quota, Atlantic bluefin tuna; Sète is one of the few fish auctions to sell deep-water rose shrimp, Port-la-Nouvelle anchovy. These species lend themselves well to direct supply from Languedoc.
Freshwater fish, for their part, do not go through the fish auctions. For Dover sole, langoustine or king scallop, you have to look to the Atlantic and the Channel: king scallop fishing is closed from 15 May to 30 September, and each scallop bed has its own opening dates. The seasonality calendar gives the months of high landings.
How to compare several suppliers in Lyon?
Without a market where all offers can be seen in one place, the comparison is done on paper, or rather on the price lists each supplier sends. A few rules:
- Bring everything back to the price delivered to Lyon
Transport weighs more heavily than in Paris or Bordeaux: a Breton fish merchant who is cheap at departure can become expensive once delivered. Ask for the free delivery threshold and the cost per box.
- Compare like for like: size grade, presentation and origin
A wild-caught Mediterranean gilthead sea bream and a farmed sea bream have neither the same price nor the same use.
- Take the delivery time into account
Fish that arrives at 6 am or at 11 am does not suit the same service.
- Keep at least two coasts
A gale in the Mediterranean or a storm in Brittany empties a fish auction for several days; a supplier on the other coast secures the menu.
The price list guide explains how to read and line up these lists; the food cost guide shows how to go from the price per kilo bought to the price per usable kilo.
Frequently asked questions
Is there a wholesale fish market in Lyon?
No. The Lyon-Corbas wholesale market, which replaced the former marché-gare in 2009, is devoted to other fresh products, and its directory lists no fresh seafood wholesaler. Seafood wholesalers work outside the market, in the conurbation, and deliver to their customers.
Is the Lyon-Corbas market a MIN?
No. It is a private wholesale market, not a MIN (wholesale market of national interest).
Which port is closest to Lyon for buying fish?
The Languedoc fish auctions: Le Grau-du-Roi, about 290 km away by road, and Sète, about 330 km. They mainly sell octopus, gilthead sea bream, monkfish and hake.
Can a fish merchant in Brittany deliver to a restaurant in Lyon?
Yes, by refrigerated carrier. The lead time depends on the port, the fish merchant and the carrier: ask about it before the first order, along with the minimum order and the free delivery threshold.
Do restaurateurs in Lyon buy at Rungis?
Some go through Rungis wholesalers who ship to the regions, mainly for species or origins that are rare locally. Others work with a local wholesaler, with fish merchants direct, or with both.
