In January, wild sea bass has its highest landings of the year, the king scallop stays in peak season, whiting and black sea bream climb towards their late-winter peak; langoustine, European lobster and brown crab are at their lowest, and at the end of the month part of the Bay of Biscay fleet stays in port. This is the month when holiday prices come back down: the right time to reprice the menu.
Status as of 13 October 2026, based on the monthly sales of all French fish auctions in 2023 and 2024 (FranceAgriMer). The full calendar covers 40 species over twelve months.
What arrives at auction in January?
| Species | What auction sales show | What to know when buying |
|---|---|---|
| Sea bass | Strongest month of the year: about 310 tonnes in January 2024 | Average auction price at its lowest, around €10/kg, half the summer price |
| King scallop | More than 3,000 tonnes in January 2024 | Average price of whole scallops back down after the holidays, around €2.30/kg |
| Whiting | Peak season from January to March | A little over €2/kg at auction: a fish for the dish of the day |
| Black sea bream (griset) | Late-winter peak season | Around €3/kg |
| Common prawn (crevette bouquet) | Still in season after the December peak | Average price among the lowest of the year, around €19/kg |
| Herring | Winter fish, from November to March, with a clear peak in November; about 400 tonnes sold per year at the Boulogne-sur-Mer fish auction | Inexpensive: €0.60 to €0.70/kg on average at Boulogne in 2024 and 2025 |
| Sea urchin (Mediterranean) | Fishing open from 15 December in the Bouches-du-Rhône, the Var and the Alpes-Maritimes, over a short season set by prefectoral order | Check the closing date of the current season |
| Monkfish, hake, pollack, haddock | Available, with no peak | Monkfish is back at around €5.40/kg, against more than €9 in December |
National rhythm of auction sales (FranceAgriMer, 2024); it varies from one port to another.
What becomes scarce?
- Langoustine is at its winter low: about 55 tonnes in January 2024 against more than 400 in May, at an average price of around €13 to €14/kg.
- European lobster drops to a few tonnes a month at auction, at around €34/kg.
- Brown crab is scarce: only a few tonnes go through the auction hall.
- Wild gilthead sea bream is at its lowest; what price lists offer comes mostly from farming.
- Dover sole and hake from the Bay of Biscay become scarcer from the end of the month: from 2024 to 2026, vessels of 8 metres and over working with gillnets or trammel nets, pelagic or pair trawls, or pelagic seines stayed in port from 22 January to 20 February to protect dolphins.
- European spiny lobster (langouste rouge), albacore, Atlantic bluefin tuna and meagre are absent or almost absent from fish auctions.

Which substitutes for the menu?
A few ideas, to adapt to your menu and the day's catch.
- If you had on the menuLangoustineIn January, think ofKing scallop, common prawnWhy : Langoustine scarce; scallops and prawns in season
- If you had on the menuEuropean lobsterIn January, think ofSeared king scallop, warty venus clam (praire)Why : Lobster at its lowest in volume
- If you had on the menuTurbotIn January, think ofBrill, line-caught sea bassWhy : In January 2024, brill sold at around €16/kg at auction, turbot at around €28
- If you had on the menuDover sole (late January)In January, think ofMegrim, line-caught whitingWhy : Megrim, another flatfish, steady all year round
- If you had on the menuWild gilthead sea breamIn January, think ofBlack sea breamWhy : Black sea bream in peak season, around €3/kg
Points to watch on prices
- Reprice after the holidays. In 2024, monkfish, turbot, European lobster and langoustine sold at auction for clearly less in January than in December (table above). A recipe costing sheet built on holiday prices overestimates the food cost.
- Prepare for the Bay of Biscay closure. From 2024 to 2026, it ran from 22 January to 20 February. For 2027, the closure lasts thirty consecutive days, chosen by each vessel owner between 15 January and 27 February 2027 and declared before 1 December 2026 (failing a declaration: from 22 January to 20 February 2027); French order of 9 September 2026. Less sole, hake and sea bass from the Bay of Biscay: plan another origin or another species for the dishes concerned.
- Make the most of sea bass before February. This is its most plentiful and cheapest month. In 2026, commercial sea bass fishing was closed in February and March in the English Channel, North Sea and Celtic Sea (EU fishing opportunities regulation, revised every year).
- Winter weather. January storms can empty fish auctions for several days in a row: keep a fallback species for each dish.
The price list guide explains how to compare offers from several suppliers, and the food cost guide how to pass a price on to the recipe costing sheet.
Frequently asked questions
Which fish is in season in January?
Sea bass, whiting, black sea bream, herring, hake, pollack and monkfish for fish; king scallop, warty venus clam and oysters for shellfish; common prawn for crustaceans.
Is sea bass cheaper in January?
On average, yes. In 2024, January was its most plentiful month at auction and its average price was around €10/kg, against about €22 in July and August.
Is Dover sole short at the end of January?
Sole from the Bay of Biscay, partly: part of the Biscay fleet, including gillnetters that fish sole, stays in port for one month in winter to limit dolphin bycatch. From 2024 to 2026, the closure ran from 22 January to 20 February. Nationally, however, auction sales of sole in February 2024 stayed close to those of January (about 250 tonnes against 230); it is mainly the average price that rises, to around €19/kg in February.
Is the king scallop still in season in January?
Yes. Fishing is open from 1 October to 14 May, and January remains a strong month: more than 3,000 tonnes sold at auction in January 2024, at a lower average price than in December.
