The whelk (bulot or buccin in French, Buccinum undatum) is a large sea snail caught in baited pots on the sandy grounds of the English Channel, mainly in Normandy; it is sold live to cookers and cooked to fishmongers and brasseries, and it is one of the pillars of the seafood platter. The Granville fish auction alone sells half of French volumes, and the name "Bulot de la Baie de Granville" has been protected by a protected geographical indication (PGI) since 2019.

When to buy whelk?

In spring and early summer. In 2024, French fish auctions sold about 500 tonnes of whelk a month in May and in June, against about a hundred in September. The average price is at its lowest in early summer and rises in autumn; it reached its highest point of the year in December, when holiday seafood platters meet landings that are still low. In 2024, the yearly average price fell by a third compared with 2023 (€2.75/kg against €4.14/kg): a reminder that whelk, like all wild-caught shellfish, has its good and bad years.

What does the "Bulot de la Baie de Granville" PGI guarantee?

The PGI, registered by the European Union in 2019, guarantees the origin: a whelk caught west of the Cotentin peninsula, from the Pointe de Goury to the Pointe de Champeaux, and landed on this coast. Its specification also requires:

  1. Pot fishing

Exclusively with baited pots, by vessels under 12 metres, on trips of 16 hours at most.

  2. A controlled size grade

From 47 to 70 mm, with at most 8% smaller whelks and 15% larger ones in a batch, whereas the EU rule only sets a minimum of 45 mm.

  3. Short lead times

First sale no later than 20 hours after landing; live shipment or cooking within 48 hours.

  4. A whole presentation

Sold in its shell, live, fresh cooked, pasteurised or frozen, possibly flavoured during cooking.

These claims say nothing about the freshness of the day: they are checked on the label and on the supplier's certificate (see the labels guide).

How to judge the freshness of a whelk?

  • Live: it withdraws into its shell when touched, with the operculum tightly closed; whole shells, a smell of the sea.
  • Cooked: firm, shiny flesh, without a strong smell; clear juice at the bottom of the tray; cooking date and use-by date visible.
  • To reject: many empty or broken shells, whelks that no longer react, an ammonia smell.

What makes the price of whelk move?

Average first-sale price at auction, France, 2024Whelk (buccin)
Yearly averageabout €2.75/kg
Cheapest monthJune: about €2.10/kg
Most expensive monthDecember: about €4.80/kg
Spread between auctionsfrom about €2.50/kg (Fécamp, Dieppe) to €2.90/kg (Granville)

Year 2024, all French fish auctions: average first-sale price at the auction hall (FranceAgriMer, sales declared at fish auctions, workbook published on 2 July 2026). Spread between auctions: among those handling at least 5% of whelk volumes. The auction price is not the price paid to the fish merchant: processing, transport and margin are added to it.

The price of whelk moves against its landings. In May and June 2024, at the peak of landings (about 490 t a month), it stayed at €2.30/kg or less; in August and September, when sales fell to 145 and then 94 t, it rose to nearly €4/kg. December is the most expensive month (about €4.80/kg for 230 t), the month of holiday seafood platters. In 2025 too, the price stayed lower in the first half of the year than in the second. Between the four Normandy auctions that make up most of the sales, the spread is small (less than €0.50/kg); Granville, where PGI whelk is sold, is the most expensive of the four, but the share of the PGI in its sales is not published.

  • The season: low price at the May and June peak, high at the end of the year.
  • Fishing rules and the stock: the management of the Bay of Granville weighs on the supply of a good half of the market.
  • The form: live, cooked or shelled, these are three different prices.
  • The origin: the PGI commands a premium over a whelk without any claim.
  • The holidays: demand for December seafood platters.

Frequently asked questions

When is whelk in season?

From March to July, with a peak in May and June. Landings are lowest from September to November; the price is highest in December.

What is the minimum size of whelk?

45 mm shell length under the EU regulation. The Bulot de la Baie de Granville PGI requires a size grade of 47 to 70 mm, with small tolerances per batch.

Are bulot and buccin the same shellfish?

Yes: "buccin" is the name of the species (Buccinum undatum), "bulot" its common name. FranceAgriMer counts it under "buccin (bulot)".

How to store cooked whelks?

Chilled, between 0 and 4 °C, in their original packaging, and to be eaten before the use-by date given by the cooker. Cooked whelk only keeps for a few days.

What is the auction price of whelk in France?

In 2024, about €2.75/kg on average at first sale in French fish auctions, from about €2.10/kg in June to about €4.80/kg in December (FranceAgriMer). This is a first-sale price, before cooking: the price paid to the fish merchant or cooker adds processing, cooking where applicable, transport and margin.
